Banana Cookies

If you have bananas that are getting a bit old, here is a great easy healthy recipe with bananas.
Ingredients
3 ripe bananas
¾ cup of uncooked creamy buckwheat
¾ cup sesame seeds
¼ cup flax seeds
1 cup organic raisins or chopped dates
1/3 cup coconut oil
1 teaspoon vanilla extract
Directions
1. Preheat oven to 350o F (175 o C)
2. In a large bowl, mash the bananas. Stir in buckwheat, seeds, dates or raisins, oil, and vanilla.
3. Mix well and allow to sit for 15 minutes. Drop teaspoonfuls onto an ungreased cookie sheet covered with parchment paper.
4. Put another cookie sheet under the first one (two sheets one on top of the other) to avoid the bottom of the cookies to burn while cooking.
5. Bake for 18-20 minutes in the preheated oven until lightly brown.
