PECAN SUGAR SQUARES
INGREDIENTS:
CRUST
1 ¼ cup coconut flour
¼ cup maple syrup
½ cup ghee or coconut oil, softened
PECAN FILLING
½ cup ghee or coconut oil, melted
½ cup coconut sugar
1/3 cup maple syrup
4 eggs
2 tsp vanilla extract
¼ tsp sea salt
2 cup pecan halves
INSTRUCTIONS
- Preheat the oven to 350 degrees F, and line an 8 x 8 baking pan with parchment paper.
- Stir together all ingredients for the crust in a large bowl. Press into the bottom of the prepared pan.
- Bake for 10 minutes until the edges are golden, then cool for 10 minutes.
- While the crust is cooking, whisk together ghee and coconut sugar in a saucepan over medium heat until smooth and creamy.
- Remove from heat. Stir in maple syrup, vanilla extract, and sea salt.
- In a large bowl, crack the eggs and whisk.
- Pour the heated filling mixture into the eggs slowly while continuously whisking so the eggs don’t cook.
- Stir in pecans, then pour the whole thing over the crust.
- Bake for 45-50 minutes until the filling is set.
- Cool for 1 hour, then refrigerate for at least 2 hours.
- Slice into 16 squares, and serve.
